DRY FRUIT BROWNIES - INDIAN TASTE IN WESTERN DISH
INGREDIENTS:
250 gm of maida
1 tsp of baking powder
1/2 tsp of baking soda
200 gm of sugar
200 gm of cashew nuts or mixed nuts
1 tsp Vanilla essence
2 tbsp od coco powder
180 gm of melted butter
200 ml of hung curd or three eggs
METHOD:
Sift the maida,baking powder,baking soda and the coco powder. Grind the sugar to a powder in a mixer. Allow the sugar to settle and then add the melted butter and blen into the sugar.
Also, mix in the hung curd and the essence. Run the mixer for a few seconds do that all the ingredients get mixed well. Run the mixer again for a few seconds and blend again and allow it to churn well till the mixture is smooth. Remove to a mixing bowl amd mix in the sifted flour a little at time, Strring all the time to ensure no lumps form. Stir in the dried fruits to obtain a smooth mixture.
At this stage also add 2 tbsp of lukewarm water, this will help to give a darker colour. Grease the base and sides of a baking tray.
Pour the mixture into the baking dish. Preheat the oven and bake this mixture in a preheated oven at 160 degree C for 20 minutes.
Reduce the heat to 140 degree and bake for 10-12 minutes more or until the cake is dark brown on top.
Insert a knitting needle in the centre to check for the baking. If the needle comes out clean, then the cake is baked. Allow the cake to cool. Cut into triangles and serve.
