RICE WRAPPED IN CABBAGE LEAVES-BAKERS PRIDE
Serves: Four
Time required: 20 minutes plus marinating and baking time
INGREDIENTS:
2 cups cooked rice, mashed(not blended use fork or potato masher)
a few whole bigger, outer leaves of cabbage
2 tbsp chopped olives
2 tbsp flaked feta cheese
1/2 cup chopped firm tomatoes
1/4 tsp red chilli powder
1 tbsp olive oil
Salt and pepper to taste
3 tbsp pine-nuts(chircoza), toasted and chopped
2 tbsp chopped mint leaves
1 tbsp chopped coriander leaves
1 tbsp olive oil
1/2 tsp lime juice
1/4 tsp red chilli powder
Few toothpicks
METHOD:
1. Clean the outer, bigger leaves of the cabbage.
2. Mix the olive oil, lime juice, red chilli powder and a bit of salt.
3. Brush the leaves with the olive oil mixture and leave it on for 10-15 minutes while preparing the other ingredients.
4. Preheat the oven to 175 degree C.
5. Mix well the remaining ingridients(except the rice) together.
6. Add the rice and some salt and pepper to taste (careful about salt as feta is usually quite salty and so are the olives).
7. Roll 2 tbsps of the mixture in each cabbage leaf and pierce with a toothpick to hold it together.
8. Grease a baking tray with olive oil.
9. Put each wrapped roll carefully on the tray and bake in the oven at 175 dergree C for about 10-15 minutes.
10. Turn in between and drizzle with oil.
11. Remove and serve
