RICE SALAD-A HEALTHY OPTION-GOOD FOR ALL THOSE WHO DECIDE TO GO ON A DIET THE DAY AFTER A PARTY

Serves: 4
Time required: 10 minutes plus chilling time

INGREDIENTS:

2 cups cooked rice
2 stalks of spring onion or 1 small red onion, chopped
1 small tomato, chopped
1/2 cup sweet corn
3 tbsp chopped pineapple
2 tbsp pumpkin seeds
A handful of chopped basil and coriander
2 tbsp olive oil
1 1/2 tbsp lime juice
Salt and pepper to taste
1/2 tsp red chilli powder

METHOD:

Mix all the ingredients together in a bowl and chill for about 15-20 mins before eating.
