PAV BHAJI

INGERDIENTS:

2 tsp garlic, finely chopped
2 tsp ginger, crushed
3 cups finely choped onions
3 cups chopped tomatoes
1 cup chopped capsicum
1 cup boiled and mashed potato
1 cup french beans, boiled
1 cup carrots, boiled
1 cup green peas, boiled
2 tbsp Pav Bhaji masala
Salt to taste
Water
Coriander leaves, chopped, to garnish
Salted butter to taste
Lemon to taste
4-6 pavs

METHOD:

To Prepare The Bhaji:

1. Heat butter in a pan and add garlic and ginger. Fry until the garlic turns slightly brown. Add the onions (keeping one cup aside for garnishing) and fry until transparent.
2. Add the tomatoes and capsicum and fry for two minutes. Add all the Bhaji masala and salt and a little water. Bring to a boil.
3. Take off the heat. Add coriander leaves and butter. Serve with lemon and pavs.

To Prepare The Pav:

Slit pavs horizontally, leaving one edge attached (to open like a book). Apply butter (as desired) and roast open on a grilled till the surfaces are hot, soft, yet crisp on both sides. Serve hot with Bhaji, a slice of lemon and chopped onion.
