CARAMEL-WALNUT PIE

My sunday was just carried away with this caramel walnut pie. Get carried away !!!

INGREDIENTS:
Crust

  • 1 1/2 cups flour
  • 1/2 tsp salt
  • 1/4 baking powder
  • 5 tsbp of unsalted butter cut into 1/2 inch cubes
  • 4 tsbp ice water
  • Filling

  • 1 1/4 cups of dried tart cherries,chopped
  • 1/2 ruby port
  • 2/3 cup golden brown sugar
  • 2/3 cup light cron syrup
  • 3 large eggs
  • 1/4 butter melted to room temperature
  • 1 1/2 tsp of vanilla extract
  • 1 cup walnuts, roasted and chopped
  • Whipped cream
  • PREPERATION:
    1. Blend flour, salt & baking power in processor.
    2. Cut butter until resembles course meals. Add 4 tsbp ice water.
    3. Process just until moist clumos form, adding more water by tspfull if dough is dry.
    4. Form dough into disc.
    5. Wrap in plastic. Chill until dough is firm enough to roll out about 30 mins.
    For Filling:
    1. Preset oven to 350° F. Boil cherries and port in a heavy small sauce pan until port is absorbed , stirring often about 10 mins. Cool completely.
    2. Beat brown sugar, corn syrup, large eggs and melted butter in a large bowl until foamy. Beat in vannila. Stir in Walnuts and cherry-port.
    3. Roll out dough on floured surface to 11 inch round, transfer to 9 inch diameter. Fold overhang under, crimp edges. Pour filling into crust.
    4. Bake pie until crust is golden and the filling is brown and just set in center about 50 mins. Cool pie completely in a dish.
    Serve with whipped cream.

    This sounds like a wonderful alternative to pecan pie for Thanksgiving!
