KATHAL(jack fruit)KI BIRYANI- A FINE BLEND FOR INDIAN TOUNGE

INGREDIENTS:
1/2 kg raw Jackfruit (kathal), 1 1/2 inch cubes
1 tsp roasted cumin powder
Salt to taste
4 green cardamoms
3 black cardamoms
3 cloves
2 one-inch sticks cinnamon
3 tablespoons olive oil to deep-fry
4 medium onions,thinly sliced
1/2 tsp caraway seeds (shahi jeera)
1 tbsp ginger paste
t tbsp garlic paste
1 tsp tumeric powder
1 tsp roasted cumin powder
2 tsp coriander powder
2 tsp red chilli powder
3 medium tomatoes chopped
1 1/2 cups of yoguth, whisked
2 tbsp chopped fresh coriander leaves
5-6 saffron strands
2 tbsp milk
1 tsp garam masala powder
10-12 fresh mint leaves, hand torn
1 tbsp kewra water (screwpine essence)

DELICIOUS SOUTH INDIAN SPICY CHETTINAD BEEF CURRY

Ingrediants:

  1. Grinded Coconut juice
  2. Ginger
  3. Garlic
  4. equal amounts of ginger n garlic

  5. Tomatoes
  6. Garnish
  7. Beef
  8. Onions
  9. Green Chillies
  10. Cinnamon
  11. Corriander seeds
  12. red chillies
  13. cumin
  14. Cardamom

Preparation:
Rost all the ingredients(Masala) in a low flame for 5 mins. Mix all the items thus roasted with Ginger n garlic. Now, All these are grinded and mixed with beef.

Now the oil is heated a little in a pan and onions are fried until its golden brown.Now the beef is mixed with the fried onions in the pan and mixed with a little water. Leave the mix to get cooked well in steam. Now ready with the Recipe.

1 Cauliflower - broken into florets - put the florets in warm water cover & leave for 10 mins remove wash, drain & keep aside

Batter:
pinch of Ajinomoto
1/2 cup refined flour
1/4 cup cornflour
1 Egg
Lime Juice - 1tbspn
Worceshire Sauce 1 tspn
1 tspn Sugar
1 teaspoon chili powder
a pinch of orange food colour powder(kesari pwd)
salt to taste
water as needed
oil for deep frying
